Membrillo

This dense fruit paste is simply made using fruit, sugar, lemon juice and pectin which results in a product with a beautiful maroon colour and a well-judged balance between quince and sugar. While it is traditionally eaten with Manchego in Spain it works well with other types of cheese and can also be used as a glaze for patisserie or to add depth and sweetness to savoury pork dishes.
